Breakfast: Banana before the gym and then some oats made with peanut butter and almond milk then topped with warmed blueberries.
Lunch: Been craving ramen soup so a while now so compromised with soba noodles and stock with some chilli oil and shiitake vegan rice paper dumplings.
Dinner: Honestly when people say ‘vegans just eat vegetables or vegans eat nothin’ put this post in their face because my dinner totally shows we don’t! Vegan chilli con carne, brown rice, homemade guac (I will face anybody with a guac challenge if they think they can make better guac than me ;)!) with corn on the cob on some romain lettuce leaves!
